Post-College Kitchen guide to wedding registries part one

When my husband Peter presented me with a ring and asked me to marry him, I was starting my final semester of college, living in a duplex with four of my best friends in Columbia, Mo. My contributions to our kitchen included a used 10-piece spatula set, some IKEA dishes and that's basically it.

When I moved to Milwaukee and started working at the newspaper, I expanded my collection to include a pot, a frying pan and a 4-by-8-inch cutting board I took from my parents' house. Peter's kitchen housed a baking sheet, a basic utensil set and not much more.

Thus, when the time came to bust out the scanner gun at Bed Bath and Beyond and register for wedding gifts, we were like kids in a candy store - very meticulous kids, mind you, as we asked the staff for recommendations, advice and specs on every toaster, blender and mop on their shelves.

After living with our sparse post-college kitchens, it was overwhelming being presented with so many gadgets and it seemed impossible to know what we'd actually want and need in the long run.

Now that I've lived for a few years with the choices we made with the scanner that day, I thought I'd share what have turned out to be the best and worst items we registered for.

SCAN IT: Quality knives. Good knives are the most essential tool in the kitchen. I've asked everyone from store clerks to chefs what brand they recommend, and the consensus seems to be that anything German is a good choice. The most important knife is the 12-inch chef's knife. You can use this to chop and slice almost anything. But a santoku, paring knives and steak knives are also pretty essential. A knife block is perfect storage, and is worth getting even if you don't fill it right away.

SKIP IT: Ice cream maker. Originally I was very practical with my registering and opted to stick to the basics. What if everyone got us frivolous items like ice cream makers and pasta presses? You can't chop vegetables with a pasta press. But I was soon convinced by a friend that if ever there were a time to get an ice cream maker, it was as a wedding gift. So I registered for one just for fun. Two years later, we have used it a grand total of three times, two of which produced not-so-great ice cream. Maybe this will change in the future and I'll go on an ice cream making binge, but if you're short on storage space and happy to eat Edy's, I would skip the ice cream maker.

SCAN IT: Cutting boards. Get a small one that you can whip out for some quick choppage, a medium-large one for most uses and a super large one for when you're cooking up a storm. I like plastic, but some people prefer wood. It's a debatable issue. But three cutting boards is not too many.
